Black Bean and Corn Enchiladas

You know we love mexican food…especially Tex-Mex enchiladas. I got some inspiration from the blog and had to make these vegetarian enchiladas complete with chili brown gravy.

Black Bean and Corn Enchiladas

For the enchiladas:

  • 1 onion, finely chopped
  • 2 cans of black beans
  • 1 can of corn
  • 1 can of diced tomatoes
  • 1/4c chopped cilantro
  • 1T garlic powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp canola oil
  • 2 c cheddar cheese
  • corn or flour tortillas (I used both)

Saute chopped onions in oil until caramelized. Mix in cans of beans, corn, tomatoes, & spices. Cook over medium heat for 5 minutes. Drain mixture over a bowl, keep the juices to the side. Add chopped cilantro and toss.

Heat tortillas in moistened towel in the microwave on medium for 3-4 minutes. Place a pinch of cheese and 2-3 T of black bean mixture in center of the tortilla and roll. Place in sprayed pan, seam side down.

Chili Brown Gravy: (I got this recipe off of

  • 1/4c canola oil (instead of lard)
  • 1/4c flour
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1-2 tsp garlic powder
  • 2 tsp cumin
  • 1/2 tsp dried oregano
  • 2 T chili powder
  • 2 c reserved juices + water

(I did modify the recipe to fit our needs and I wound up doubling it because I made 2 pans of enchiladas.)

Heat oil in a pan. Add flour and stir for approximately 4 minutes, until flour is nicely browned. Add the rest of the spices and cook for 1 minute. Add leftover juices and water slowly, while stirring gravy. Stir until smooth and allow to cook over low heat for 5 minutes. You might have to add some water to adjust the thickness according to taste.

Pour gravy over enchiladas, sprinkle with remaining cheese and place in a 375 degree oven for 10-15 minutes or until cheese is nicely browned. After you remove it from oven, let it rest for 5 minutes to set. Serve and enjoy!
